1 cup margarine
1 cup sugar
4 cups buttermilk
2 tsps. soda
3 eggs
5 cups whole wheat flour
2 cups white flour
1 cup granola
1 cup oat bran
3 tsps. baking powder
2 tsps. cream of tartar
2 tsps. salt
Beat together margarine and sugar. Add buttermilk, soda, eggs, baking powder, cream of tartar and salt. Add all
remaining ingredients. It's a stiff dough. Press into a large baking pan and bake, 40 minutes at 350 degrees. Cool
slightly. Cut into small squares and lay them out on baking sheets. Reduce oven to 150 degrees and dry rusks for
several hours at the low heat. Turn once to dry evenly. Keep oven door slightly ajar to let moisture escape. These
get very crunchy.
Note: May use skimmed milk in place of buttermilk; other ingredients remain same. Other ground grains such
as cornmeal, bulgar, etc. may be substituted for part of the other grains, making sure amounts remain same.
